We ran and I still do 12.50's on 8" rims. I've got 17x9's now for 12.50's on the new build.
We are not the craziest or extremest snow wheelers but we never have had tires come off beads with low single digits of air psi, these are not DD setup wheelers, we don't do rocks since its not local for us. I think this boils down to use/geography??????

Back in the day, we ran deep and steep Mud, Sand, Rock, and I always found that the straighter the sidewalls the better the rig worked, then there were the hundreds of miles of unmaintained logging roads and just like on the street/track the sidewall was better standing up when running fast.
In snow running, Fullsize, because of the weight, I often don't even bother to air down because; while it makes a ton of difference on say a Jeep size rig, a 3/4T truck has terrible weight distribution and there is typically to much of it! In that situation I want the tallest tire I can get.
The exception was my Bronco where getting down to 5-PSIG let it float. On the side of the Hood 30-years ago we discovered we were on ~15' of snow one day when we ran into a side hill cut: Oops

Maybe not totally geography, I think application and driver preference playing a big part too
